Spicy whipped feta

Ingredients
- 125g feta
- 1 T whole milk
- 2 t fresh thyme, chopped
- 1/8 t cayenne pepper
- Honey drizzling
- Something to slather this on – for this recipe I used 3 slices of sourdough, quartered, crackers work too
Method
- Put feta, milk, chopped thyme and cayenne into a mixing bowl, or the bowl of a mini-whizz if you have one.
- Whisk or blend until the mixture is creamy and a consistency that drops off a spoon. You may need to add more milk if your feta is on the drier side.
- Spread over toast or crackers. Drizzle with honey.
About this recipe
This recipe is decent bang for your buck in my humble opinion. It’s a classy-looking appetiser with a good range of flavours – salty briny feta, fresh bright green herbs, warm cayenne and a hit of sweet honey to finish it off. Everything you need to get all that merely a few bits and pieces from the supermarket (not that I am necessarily under the impression that everyone goes racing off to the supermarket as soon as they see one of my recipes). Although it’s easy to do with a mini-chopper/blender contraption, you absolutely don’t need to have one to pull this together – a vigorous whisking does the trick.
